Description

When it comes to guacamole everybody has a different opinion on how you should do it and what you should put in it. For me, the simpler the better, ripe avocados, shallots, tomatoes and salt, that’s it ! Why shallots? Because they are sweeter than red onion with a sutler taste. And another quick tip: shallots are the reason everything tastes better at restaurants, especially high-end restaurants; we put it everywhere! Where is the coriander? you may ask yourself. I love coriander but I also like the sweet taste of avocados, I like a well-balanced dish not a war between ingredients but you can add it if you like, nobody is watching. Why lemon instead of lime? I love the raw acidic taste of lemon and the fact that you most likely have some in your refrigerator right now. I invite you to experiment with this recipe, add more of this, a little bit less of that until you find YOUR balance according to YOUR taste. Enjoy!

Ingredients

4 ripe avocados
1 shallot, minced
1 medium tomato, diced
Juice of half a lemon
Salt to taste

Directions

Halve and pit the avocados and scoop the flesh into a bowl.

Mash the avocados and stir in the remaining ingredients.

Serve with nachos, tortillas or raw vegetables.
