Ultimate Vegan Sandwich

Description

Homemade BBQ sauce, protein-packed Seitan*and sautéed vegetables fill this mouthwatering Vegan BBQ Seitan sandwich.

And did you know you can do WAY more with your waffle maker than just make waffles? For sandwiches, a waffle iron is kind of like a panini press on steroids.  

If you don’t own a panini press or a waffle maker:
Heat 1 tablespoon olive oil in a cast-iron or nonstick skillet over medium-low heat.
Press the sandwich slightly and place it in the skillet. Cook until golden on the bottom, 3 to 5 minutes.Flip, adding more olive oil to the pan if needed, and cook until the other side is golden 3 to 5 more minutes.

Ingredients

3 tbsp vegetable oil
1 red onion, sliced
2 portobello mushrooms, sliced
1 red bell pepper, sliced
1/3 cup BBQ sauce *
300 g sliced seitan
4 slices of bread
* BBQ sauce
2 tbsp soy sauce
3 tbsp ketchup
1 tbsp apple cider vinegar
2 tbsp molasses
1/4 tsp crushed red pepper

Directions

In a saucepan over medium-high heat, sauté red onions, mushrooms and red peppers in oil until golden brown. About 10 minutes.

Add BBQ sauce, mix well and remove from heat.

Place slices of seitan on the bread, add the grilled vegetables and place in a panini press or a waffle maker.

*BBQ sauce: Mix all the ingredients in a bowl and voilà.
