Description

These amazing, Vegan chewy coconut cookies are crunchy on the outside and soft on the inside.

Ingredients

1/2 cup vegan butter (125 ml)
3/4 cup coconut sugar (100 g) or 1/2 cup white sugar (100 g)
1/2 cup packed brown sugar (85 g)
1/2 tsp. teaspoon vanilla extract
1/4 cup plant-based milk (60 ml)
1 1/2 cups all-purpose flour (200 g)
1 1/2 cup unsweetened grated coconut (125 g)
1/2 tsp. teaspoon baking powder
1/2 tsp. teaspoon salt

Directions

Preheat the oven to 375°F (190°C).

Beat together, vegan butter, coconut sugar (or white sugar), brown sugar and vanilla for 4 minutes.

Add plant-based milk, and beat for 1 minute.

In another bowl, place the flour, grated coconut, baking powder and salt. Mix well.

Add the flour mixture to the butter mixture.

Refrigerate the cookie dough for 30 minutes.

Shape the dough into balls. Place on the cookie sheet lined with parchment paper, leaving enough space between the cookies. Flatten with a spoon.

Bake for 10 to 12 minutes or until golden brown.
